Attention Deficit Hyperactivity Disorder (ADHD), one of the most common neurological behavioral disorders, affects millions of children worldwide. It affects 3 - 5% of all school aged children.  The symptoms of ADHD fall into three groups; inattention, hyperactivity, and impulsive behavior. ADHD is closely related to Attention Deficit Disorder (ADD), it impairs a person’s attention and impulse control, but not hyperactivity.

ADHD and ADD have been diagnosed much more often in males than females. Both may also run in a person’s family. What ADHD does is make it more difficult for a child to interact in social situations and to do well in school.

While many eventually do outgrow the disorder, at least a one-third of these children will remain affected throughout their adulthood. While the exact cause of ADHD remains unclear, it seems that it is set into motion at an early age while the brain is developing. Imaging studies of preschool children with symptoms of ADHD conducted by researchers from the Kennedy Krieger Institute found that the region of the brain that controls the cognitive and motor control was smaller in those children than in typically developing children. Studies such as these have researchers exploring the association of ADHD and certain factors such as environmental toxins, food allergies, fatty acid deficiency, mineral deficiencies, and many more.

About two-thirds of the human brain is composed of fats and roughly one-fourth of the fats consist of phospholipids. Phospholipids are a class of lipids that are a major component in the formation of cell membranes. These omega-3 fatty acids play a crucial role in making substances which brain cells use in communicating.

A study by researchers from Purdue University revealed that children with omega-3 fatty acid deficiencies are more likely to be hyperactive and inattentive than those who are at normal levels. Omega-3 fatty acids are critical for the cerebral cortex to function correctly. The cerebral cortex is the part of the brain that plays a key in attention, consciousness, memory, perceptual awareness, speech, and thought. Experts are led to believe that omega-3 fatty acids may explain certain health and behavioral problems associated with ADHD, such as, food allergies, fatigue, skin disorders, and irritability.

Over the years there have been many studies on whether there is a link between ADHD and food additives. In 1973 Dr. Benjamin Feingold pioneered research that linked ADHD to chemicals put into the body such as additives and dyes. In his study, he found that removing preservatives and additives from a child suffering from ADHD decreased their symptoms.

Additional studies have shown a link with a link between the consumption of large quantities of sugar with ADHD. Sugar essentially robs the body of important vitamins, minerals, and enzymes and increase ones hyperactivity by preventing the body’s blood sugar levels from remaining at a normal level. Many experts agree that eliminating food allergens from an individual’s diet is the key when dealing with ADD or ADHD. Ginger & Ovarian Cancer

Ginger can kill ovarian cancer cells while the compound that makes peppers hot can shrink pancreatic tumors, researchers told a conference. Their studies add to a growing body of evidence that at least some popular spices might slow or prevent the growth of cancer.

Dr. Rebecca Liu, an assistant professor of obstetrics and gynecology at the University of Michigan Comprehensive Cancer Center, and colleagues tested ginger powder dissolved in solution by putting it on ovarian cancer cell cultures. It killed the ovarian cancer cells in two different ways. First, through a self-destruction process called apoptosis and second, through the process of autophagy in which cancer cells digest themselves, the researchers told a meeting of the American Association for Cancer Research.

Ovarian cancer kills 16,000 out of the 22,000 U.S. women who are diagnosed with it every year, according to the American Cancer Society. Ginger has been shown to help control inflammation, which can contribute to the development of ovarian cancer cells.

“In multiple ovarian cancer cell lines, we found that ginger-induced cell death at a similar or better rate than the platinum-based chemotherapy drugs typically used to treat ovarian cancer,” said Dr. Jennifer Rhode, who helped work on the study.

A group called MIND, the largest mental health charity in England , did a study amongst people suffering from depression and found that many felt much better after simply eating a banana. This is because bananas contain Tryptophan, a type of protein that the body converts into serotonin, known to make you relax, improve your mood and generally make you feel happier.

Two-hundred students at a Twickenham ( Middlesex , UK ) school were helped through their exams this year by eating bananas at breakfast, break, and lunch in a bid to boost their brain power. Research has shown that the potassium-packed fruit can assist learning by making pupils more alert.

The researchers were able to show that freeze-dried strawberries were able to slow precancerous lesions in 29 of the studies 36 participants. Each of the patients ate 60 grams(about 2 ounces) of freeze-dried strawberries daily for a period of six months. “We found that daily consumption of strawberries suppressed various biomarkers involved in esophageal carcinogenesis, including cell proliferation, inflammation and gene transcription,” said Dr. Tong Chen, lead author of the study.
 
“We concluded from this study that six months of strawberry treatment is safe and easy to consume. In addition, our preliminary data suggests that strawberries decreased histological grade of precancerous lesions and reduced cancer-related molecular events,” said Dr. Chen.
 
“We predict that the majority of patients with precancerous lesions in their esophagus will develop esophageal cancer over subsequent decades,” said Chen. “Our study is important because it shows that strawberries may slow the progression of precancerous lesion in the esophagus. Strawberries may be an alternative, or may work together with other chemo-preventive drugs, for the prevention of esophageal cancer. But, we will need to test this in randomized placebo-controlled trials in the future.”
 
In the United States, more than 16,000 new cases of esophageal cancer will be diagnosed this year alone. Risk factors for developing esophageal cancer include but not limited to: tobacco use, alcohol use, intake of salty food, food contaminated with various mycotoxins, a poor diet lacking fruits and vegetables, dietary vitamin and mineral deficiencies, and consumption of hot foods and beverages.

The Benefits Of Lycopene - Tomatoes Are Souper!

Scientists are suggesting that tomato lovers may be more likely to reduce the risk of serious disease. Lycopene, an anti oxidant which gives tomatoes their lovely rich red color, helps remove free radicals from the body. Free radicals are unstable oxygen molecules and have been implicated in cancer and other serious diseases.

Professor Michael Avirim of the Rambam Medical Center in Haifa, Israel who is testing lycopene in clinical trials says, ' In its natural form, lycopene is an excellent anti oxidant that helps to prevent formation of oxidized LDL, the 'bad' cholesterol in blood, which contributes to the build up of plaque that narrows, stiffens and constricts arteries and can lead to heart attacks. When this natural extract was added to cancer cell cultures, the lycopene inhibited their growth. Lycopene is the most potent nutritional antioxidant found to date.

Another study compared men who had had a heart attack with the same number of healthy men and found that those with high levels of lycopene appeared to reduce their risk of heart diseases by 50%.  The study’s coordinator, Lenore Kohlmeier, professor of nutrition and epidemiology at the university of North Carolina, said, 'Based on our findings, and other research, lycopene can be an excellent antioxidant, we recommend that people eat tomato based cooked foods.'

Several recent studies have shown that a diet rich in tomatoes and tomato products is strongly linked to a reduced risk of certain cancers. In a six year study of 48,000 male professionals, Dr Edward Giovannucci and colleagues at Harvard Medical School found that consuming tomatoes and tomato based products between five to seven serving a week was associated with a reduced risk of prostate cancer of 21% to 34%.

Another study published in the International Journal of Cancer said that lycopene appears to protect against cancer of the mouth, pharynx, esophagus, stomach, colon and rectum. Researchers at the University of Illinois report that women with the highest lycopene levels had a five fold lower risk of developing precancerous signs of cervical cancer than women with lowest lycopene levels.

The human body does not produce lycopene alone and therefore relies on a consumption of tomatoes and tomato based products for this anti oxidant. Nutritionists and other health professionals have long advocated the cancer preventative benefits of a diet high in fruits and vegetables. .

Lycopene: Just The Facts

Research by Dr. Joseph Levy and colleagues from Ben-Gurion University of the Negev, Beer-Sheva, Israel, may have identified the unique mechanism through which lycopene protects against cancer which is by activating cancer-preventive phase II enzymes.

Lycopene is an open-chain unsaturated carotenoid that imparts red color to tomatoes.

Lycopene is a proven anti-oxidant that may lower the risk of certain diseases including cancer and heart disease.

In the body, lycopene is deposited in the liver, lungs, prostate gland, colon and skin. Its concentration in body tissues tends to be higher than all other carotenoids.

Epidemiological studies have shown that high intake of lycopene-containing vegetables is inversely associated with the incidence of certain types of cancer. For example, habitual intake of tomato products has been found to decrease the risk of cancer of the digestive tract among Italians.

In one six-year study by Harvard Medical School and Harvard School of Public Health, the diets of more than 47,000 men were studied. Of 46 fruits and vegetables evaluated, only the tomato products (which contain large quantities of lycopene) showed a measurable relationship to reduce prostate cancer risk. As consumption of tomato products increased, levels of lycopene in the blood increased, and the risk for prostate cancer decreased. The study also showed that the heat processing of tomatoes and tomato products increases Lycopene bioavailability.

Ongoing research suggests that lycopene can reduce the risk of macular degenerative disease, serum lipid oxidation and cancers of the lung, bladder, cervix and skin.

Understanding Type 2 Diabetes

Rates of Type 2 (Adult Onset) Diabetes is skyrocketing in our society.  18 million Americans are now stricken with Type 2 Diabetes, 20% of those over age 65 have it and 1 in 3 who have it don’t even know they have it.   In addition, this difficult chronic disease is now showing up in young adults and even in school age children. The good news is that 90% of cases are PREVENTABLE.

Prevention starts with understanding the cause.  When a healthy person eats a meal, the body converts carbohydrates into blood sugar.  The brain recognizes the rise in blood sugar levels and signals the pancreas to produce insulin.  Insulin is a chemical messenger that rings the “dinner bell” telling all 10 trillion cells in the body to come and feed on the blood sugar.  As the cells feed on the blood sugar, the blood sugar levels come back down.  This is how it’s supposed to work.

Carbohydrates come in two forms natural (complex) and man-made (simple). The man-made carbs are found in processed foods such as white table sugar, candy, sodas, high fructose corn syrup, and white bread. Eating man-made carbs causes sudden, unusually high and sustained spikes in your blood sugar levels.  This constant over-stimulation of the pancreas, year after year after year, causes your “internal machinery” to wear out prematurely.   In some cases, the pancreas gets tired and can’t produce enough insulin. Get moving . Inactivity promotes Type 2 Diabetes. Every two hours you spend watching TV instead of pursuing something more active increases the changes of developing diabetes by 14%. Working your muscles more often and making them work harder improves their ability to use insulin and absorb glucose. This puts less stress on your insulin-making machinery.

Long bouts of hot, sweaty exercise aren't necessary to reap this benefit. Findings from the Nurses' Health Study and Health Professionals Follow-up Study suggest that walking briskly for a half hour every day reduces the risk of developing Type 2 Diabetes by 30%.

This amount of exercise has a variety of other benefits as well. And even greater cardiovascular and other benefits can be attained by more, and more intense, exercise.

Tune-up your diet . Two dietary changes can have a big impact on the risk of Type 2 Diabetes.
Choose whole grains and whole-grain products over highly processed carbohydrates . In other words, choose whole foods instead of processed foods.
Choose good fats instead of bad fats . The types of fats in your diet can also affect the development of diabetes. Good fats, such as the polyunsaturated fats found in tuna, salmon, liquid vegetable oils, and many nuts, can help ward off Type 2 Diabetes. Trans fats do just the opposite. These bad fats are found in many margarines, packaged baked goods, fried foods in most fast-food restaurants, and any product that lists "partially hydrogenated vegetable oil" on the label. If you already have diabetes, eating fish can help protect you against a heart attack or dying from heart disease.

If you smoke, try to quit. Add Type 2 Diabetes to the long list of health problems linked with smoking. Smokers are 50% to 90% more likely to develop diabetes than nonsmokers.

Red Meat & Processed Meat

The first large scale study of red meat and processed meat consumption and its effect on cancer risk was recently completed by the U.S. Cancer Institute.  The long term study followed 500,000 people aged 50 to 71 for several years, during which time about 53,000 cases of cancer occurred within the study group.

For purposes of the study, red meat was defined as all types of beef, pork and lamb. Processed meat included bacon, red meat sausage, poultry sausage, luncheon meats, cold cuts, ham and most types of hot dogs including turkey dogs.

The study findings are published in the December 2007 issue of the journal Medicine from the Public Library of Science.  The researchers reported that people who eat a lot of red meat and processed meats have a higher risk of several types of cancer, including lung cancer and colorectal cancer.

This study was the first to show a link between meat and lung cancer. It also shows that people who eat a lot of meat have a higher risk of liver and esophageal cancer and that men raise their risk of pancreatic cancer by eating red meat.

According to Dr. Amanda Cross and her colleagues at the U.S. National Cancer Institute, "a decrease in the consumption of red and processed meat could reduce the incidence of cancer at multiple sites.”

Study participants who ate the least red meat showed a 20 to 60 percent decrease in risk of esophageal, colorectal, liver, and lung cancer when compared to those who ate the most red meat. These differences held even when smoking was accounted for.

How To Prevent Diabetes

If it was an infectious disease, passed from one person to another, public health officials would say we're in the midst of an epidemic. This difficult disease is striking an ever-growing number of adults. Even more alarming, it's now beginning to show up in our teenagers and children.

Glucose (a.k.a blood sugar) is the fuel that provides energy to the 10 Trillion cells that make up a human being. When we eat, carbohydrates are converted into glucose, the glucose then moves through the bloodstream to feed the cells.  It’s important to have the right amount of glucose in the blood, so your body has some fairly complex “machinery” to get the job done.   Anytime your glucose levels spike up rapidly, your brain tells your pancreas to produce insulin. Insulin is a chemical messenger that rings the “dinner bell” for your cells.  When the “dinner bell” rings, your cells come running to get their glucose.

Next we have the topic of carbohydrates, and they come in two forms natural (complex) and man-made (simple). According to the Harvard School of Public Health, making a few changes can dramatically lower your chances of developing type 2 diabetes. The same changes can also lower the chances of developing heart disease and some cancers.

Control your weight. Excess weight is the single most important cause of type 2 diabetes. Being overweight increases the chances of developing type 2 diabetes seven-fold. Being obese makes you 20 to 40 times more likely to develop diabetes than someone with a healthy weight.

Losing weight can help if your weight is above the healthy-weight range. Losing 7-10% of your current weight can cut in half your chances of developing type 2 diabetes.

Get moving. Inactivity promotes type 2 diabetes. Every two hours you spend watching TV instead of pursuing something more active increases the changes of developing diabetes by 14%. Working your muscles more often and making them work harder improves their ability to use insulin and absorb glucose. This puts less stress on your insulin-making machinery.

Long bouts of hot, sweaty exercise aren't necessary to reap this benefit. Findings from the Nurses' Health Study and Health Professionals Follow-up Study suggest that walking briskly for a half hour every day reduces the risk of developing type 2 diabetes by 30%.

This amount of exercise has a variety of other benefits as well. And even greater cardiovascular and other benefits can be attained by more, and more intense, exercise.

Tune-up your diet. Two dietary changes can have a big impact on the risk of type 2 diabetes.

1. Choose whole grains and whole-grain products over highly processed carbohydrates. In other words, choose whole foods instead of processed foods.

2. Choose good fats instead of bad fats. The types of fats in your diet can also affect the development of diabetes. Good fats, such as the polyunsaturated fats found in tuna, salmon, liquid vegetable oils, and many nuts, can help ward off type 2 diabetes. Trans fats do just the opposite. These bad fats are found in many margarines, packaged baked goods, fried foods in most fast-food restaurants, and any product that lists "partially hydrogenated vegetable oil" on the label. If you already have diabetes, eating fish can help protect you against a heart attack or dying from heart disease.

If you smoke, try to quit. Add type 2 diabetes to the long list of health problems linked with smoking. Smokers are 50% to 90% more likely to develop diabetes than nonsmokers.

Walk Away From Stroke!

Walking is a low-impact, high-benefit exercise that is simple, safe, and has many health benefits. Recent research, conducted at Harvard School of Public Health, shows that women who walk at a brisk pace (3 miles per hour or faster) could reduce their risk of stroke.
 
The lead author of the research, Jacob Sattelmair, said "Physical activity, including regular walking, is an important modifiable behaviour for stroke prevention." He also stated, "Physical activity is essential to promoting cardiovascular health and reducing risk of cardiovascular disease, and walking is one way of achieving physical activity."
 
The study followed roughly 40,000 women with an average age of 54 and tracked their activities such as walking, jogging, running, biking, and aerobic exericse. Walking was categorized in three groups for this study:
 
Normal, which was between 2 and 2.9 miles per an hour
Brisk, which was between 3 and 3.9 miles per an hour
Very Brisk, Which was 4 miles per hour or greater
 
The researchers found that women who maintained an active lifestyle were 17 percent less likely to suffer a stroke compared to those who had an inactive lifestyle. In addition, the women who walked at a brisk pace lower their risk of hemorrhagic stroke by 68 percent and any other type of stroke by 37 percent. It was also found that the women who walked two or more hours a week lowered their risk of hemorrhagic stroke by 57 percent and 30 percent for any other type of stroke! The researchers were amazed to find that vigorous activity wasn't associated with a reduced risk of having a stroke.
 
Only 579 of the women were recorded of having suffered a stroke during a 12 year follow-up period. The results of the researchers were detailed in Stroke: The Journal of the American Heart Association.

Oats are a nutritious whole grain that can help to prevent heart disease and diabetes. Oats contain a special type of fiber that is called beta-glucan. Studies dating back over 40 years have consistently shown the beneficial effects of beta-glucan on cholesterol levels. In individuals with cholesterol above 220, consuming only 3 grams of soluble oat fiber per day (an amount found in one bowl of oatmeal) typically lowers total cholesterol by 8-23%. Each 1% drop in cholesterol equates to a 2% decrease in the risk of developing heart disease. Now that’s an easy way to take care of your heart.

Studies also show that beta-glucan has beneficial effects in diabetes as well. Raisins and Gum Disease

The 7 Day Whole Food Diet - Lose Weight And Feel Great

The New You 7 is a 7 day supply of whole foods. The concept is to "re-start" your body nutritionally - back to the basics of whole foods and water. Start each day with a big glass of water with Stardust 2 Hydr8 in it. Then as soon as you feel a little hungry, take a small handful of one of the snack foods that you have 7 bags of.

Next, take a little bit of the food out of your hand, pop it in your mouth, and chew it up slowly and thoroughly (25-30 times) to aid in the digestive process, and so you can taste and savor these nutrient-dense raw whole foods. Keep eating/snacking and drinking water until you are satisfied, not until you are full, but until you are satisfied. You may eat the foods in any order you prefer, but it's probably better not to eat all of one kind before you start on another. Mix them up for variety. CANCER PREVENTION
Over the past four years, apple consumption has been linked with reduced cancer risk in several studies. A 2001 Mayo Clinic study indicated that quercetin, a flavonoid abundant in apples, helps prevent the growth of prostate cancer cells. A Cornell University study indicated phytochemicals in the skin of an apple inhibited the reproduction of colon cancer cells by 43 percent. The National Cancer Institute has reported that foods containing flavonoids like those found in apples may reduce the risk of lung cancer by as much as 50 percent. Bubbling Over: New Research Shows Direct Link Between Soda and Obesity

While health officials have long suspected the link between obesity and soda consumption, research released today provides the first scientific evidence of the potent role soda and other sugar-sweetened beverages play in fueling California’s expanding girth.

In their landmark study: Bubbling Over: Soda Consumption and Its Link to Obesity in California, researchers from the UCLA Center for Health Policy Research (CHPR) and the California Center for Public Health Advocacy (CCPHA) discovered a strong correlation between soda consumption and weight. Based upon data from more than 40,000 interviews conducted by the California Health Interview Surveys (CHIS), researchers found that adults who drink a soda or more per day are 27 percent more likely to be overweight than those who do not drink sodas, regardless of income or ethnicity.

"The science is clear and conclusive: soda is fueling California’s $41 billion a year obesity epidemic," says CCPHA Executive Director Dr. Harold Goldstein, an author of the research brief. "We drink soda like water. But unlike water, soda serves up a whopping 17 teaspoons of sugar in every 20-ounce serving."

Research shows that over the last 30 years Americans consumed 278 more calories per day even as physical activity levels remained relatively unchanged. One of the biggest changes in diet during that period was the enormous increase in soda consumption, accounting for as much as 43 percent of all new calories. According to Goldstein, that research, combined with this new data on soda consumption, offers conclusive proof of the link between soda and obesity.

And while adult soda consumption is troubling, consumption trends among children paint an even more alarming picture for the future health of California. The study found that 41 percent of young children (2-11 years of age) are drinking at least one soda or sugar-sweetened beverage every day. Adolescents (12-17) represent the biggest consumers, with 62 percent (over 2 million youths) drinking one or more sodas every day – the equivalent of consuming 39 pounds of sugar each year in soda and other sugar-sweetened beverages.

"Soda is cheap, sweet and irresistibly marketed to teens," says the study’s lead author, Dr. Susan H. Babey, a research scientist with the UCLA Center for Health Policy Research. "Not enough teens know about the health and dietary risks of drinking huge quantities of what is essentially liquid sugar while television and advertising tell them it is ‘cool’ to do so."

There were major differences in adult consumption rates by county, the study discovered. Residents of the lowest soda consuming counties of Marin, San Francisco, Yolo and San Mateo drink far less soda than their counterparts in the heaviest drinking counties of Kings, Madera, Kern and Imperial. Nevertheless, the soda/obesity linkage still holds true - those who consume large amounts of soda, regardless of where they live, suffer disproportionally from obesity and overweight.

"If we are serious about tackling the obesity crisis, cutting back soda consumption has to be the top priority," Goldstein asserts. "Parents, communities, businesses and government all have a role to play in helping to reduce consumption. We cannot afford to raise another ‘Pepsi Generation.’"

Funding for the study was provided by The California Endowment, a private statewide health foundation that is a national leader in the childhood obesity prevention movement.

"This research clearly shows the very serious health risks of drinking soda and other sweetened beverages. I hope policymakers will read this report closely and think about what they can do to combat the obesity epidemic that is clearly tied to consuming too many sodas," says Dr. Robert K. Ross, president and CEO of The California Endowment.

In a 2001 study at the University of Florida indicated that mangos do in fact have the ability to fight off cancer.

Two very potent antioxidants called carotenoids and phenolic compounds found in mangos can protect cells from being damaged by free radicals. When cells are damaged they can become cancerous, said Susan Percival, a University of Florida Nutrition and Immunity Specialist.

“We can’t say these compounds from mangos are going to prevent cancer in humans because those studies haven’t been done, but what we can say about the mango is that it contains potent antioxidants, and it would be a good part of a healthy diet," Susan said. “Every American has heard the message that five servings of fruits and vegetables a day are important to one’s health, this is some more evidence that a particular fruit has cancer-fighting capabilities.”

Researchers from Loma Linda University in California and New Mexico State University in Las Cruces , New Mexico , have confirmed that when pecans are part of the daily diet, levels of “bad” cholesterol in the blood drop. Pecans get their cholesterol-lowering ability from both the type of fat they contain and the presence of beta-sitosterol, a natural cholesterol-lowering compound. Eating 1 ½ ounces of pecans a day, when its part of a heart-healthy diet, can reduce the risk of heart disease. Moreover, a study published in the June 2004 issue of the Journal of Agricultural and Food Chemistry found that pecans, hazelnuts, and walnuts contained the highest antioxidant levels of all nuts tested.

Scientists are suggesting that tomato lovers may be more likely to reduce the risk of serious disease. Lycopene, an anti oxidant which gives tomatoes their lovely rich red color, helps remove free radicals from the body. Free radicals are unstable oxygen molecules and have been implicated in cancer and other serious diseases.

Professor Michael Avirim of the Rambam Medical Center in Haifa, Israel who is testing lycopene in clinical trials says, ' In its natural form, lycopene is an excellent anti oxidant that helps to prevent formation of oxidized LDL, the 'bad' cholesterol in blood, which contributes to the build up of plaque that narrows, stiffens and constricts arteries and can lead to heart attacks. When this natural extract was added to cancer cell cultures, the lycopene inhibited their growth. Lycopene is the most potent nutritional antioxidant found to date.

Another study compared men who had had a heart attack with the same number of healthy men and found that those with high levels of lycopene appeared to reduce their risk of heart diseases by 50%. The study’s coordinator, Lenore Kohlmeier, professor of nutrition and epidemiology at the university of North Carolina, said, 'Based on our findings, and other research, lycopene can be an excellent antioxidant, we recommend that people eat tomato based cooked foods.

Several recent studies have shown that a diet rich in tomatoes and tomato products is strongly linked to a reduced risk of certain cancers. In a six year study of 48,000 male professionals, Dr Edward Giovannucci and colleagues at Harvard Medical School found that consuming tomatoes and tomato based products between five to seven serving a week was associated with a reduced risk of prostate cancer of 21% to 34%.

Another study published in the International Journal of Cancer said that lycopene appears to protect against cancer of the mouth, pharynx, esophagus, stomach, colon and rectum. Researchers at the University of Illinois report that women with the highest lycopene levels had a five fold lower risk of developing precancerous signs of cervical cancer than women with lowest lycopene levels.

The human body does not produce lycopene alone and therefore relies on a consumption of tomatoes and tomato based products for this anti oxidant. Nutritionists and other health professionals have long advocated the cancer preventative benefits of a diet high in fruits and vegetables.

In the body, lycopene is deposited in the liver, lungs, prostate gland, colon and skin. Its concentration in body tissues tends to be higher than all other carotenoids.

Epidemiological studies have shown that high intake of lycopene-containing vegetables is inversely associated with the incidence of certain types of cancer. For example, habitual intake of tomato products has been found to decrease the risk of cancer of the digestive tract among Italians.

In one six-year study by Harvard Medical School and Harvard School of Public Health, the diets of more than 47,000 men were studied. Of 46 fruits and vegetables evaluated, only the tomato products (which contain large quantities of lycopene) showed a measurable relationship to reduce prostate cancer risk. As consumption of tomato products increased, levels of lycopene in the blood increased, and the risk for prostate cancer decreased. The study also showed that the heat processing of tomatoes and tomato products increases Lycopene bioavailability.

Ongoing research suggests that lycopene can reduce the risk of macular degenerative disease, serum lipid oxidation and cancers of the lung, bladder, cervix and skin.

Health researchers from King’s College in London have just concluded a study that suggests people who are physically active in their free time may be biologically younger than their less active peers. The research was published in the Journal of the American Medical Association, January 28 th, 2008.

The researchers looked at the physical activity levels, smoking habits and socioeconomic status of 2,401 study participants. The researchers also collected DNA samples from participants and examined certain DNA characteristics that change as part of the aging process and therefore may serve as a marker of a person's biological age. Overall, the study participants had changes to the DNA characteristics that come with aging, but those who were more active in their leisure time showed less of a change.

"A sedentary lifestyle increases the propensity to aging-related diseases and premature death. Inactivity may diminish life expectancy not only by predisposing to aging-related diseases, but also because it may influence the aging process itself," study author Lynn F. Cherkas, of King's College London, said in a prepared statement.

"The U.S. guidelines recommend that 30 minutes of moderate-intensity physical activity at least five days a week can have significant health benefits," the researchers wrote. "Our results underscore the vital importance of these guidelines. They show that adults who partake in regular physical activity are biologically younger than sedentary individuals. This conclusion provides a powerful message that could be used by clinicians to promote the potential anti-aging effect of regular exercise."

Walnuts May Prevent Breast Cancer

DENVER - Walnut consumption may provide the body with essential omega-3 fatty acids, antioxidants and phytosterols that reduce the risk of breast cancer, according to a study presented at the American Association for Cancer Research 100th Annual Meeting 2009.

Elaine Hardman, Ph.D., associate professor of medicine at Marshall University School of Medicine, said that while her study was done with laboratory animals rather than humans, people should heed the recommendation to eat more walnuts.

"Walnuts are better than cookies, french fries or potato chips when you need a snack," said Hardman. "We know that a healthy diet overall prevents all manner of chronic diseases."

Hardman and colleagues studied mice that were fed a diet that they estimated was the human equivalent of two ounces of walnuts per day. A separate group of mice were fed a control diet.

Standard testing showed that walnut consumption significantly decreased breast tumor incidence, the number of glands with a tumor and tumor size.

"These laboratory mice typically have 100 percent tumor incidence at five months; walnut consumption delayed those tumors by at least three weeks," said Hardman.

Molecular analysis showed that increased consumption of omega-3 fatty acids contributed to the decline in tumor incidence, but other parts of the walnut contributed as well.

"With dietary interventions you see multiple mechanisms when working with the whole food," said Hardman. "It is clear that walnuts contribute to a healthy diet that can reduce breast cancer."

The Power Of Cinnamon - Reduce Your Blood Sugar Level

Just half a teaspoon of cinnamon a day significantly reduces blood sugar levels in diabetics, a new study has found. The effect, which can be produced even by soaking a cinnamon stick your tea, could also benefit millions of non-diabetics who have blood sugar problem but are unaware of it.

The discovery was initially made by accident, by Richard Anderson at the US Department of Agriculture's Human Nutrition Research Center in Beltsville, Maryland. "We were looking at the effects of common foods on blood sugar; one was the American favorite, apple pie, which is usually spiced with cinnamon. We expected it to be bad. But it helped," he says.

The active ingredient in cinnamon turned out to be a water-soluble polyphenol compound called MHCP. In test tube experiments, MHCP mimics insulin, activates its receptor, and works synergistically with insulin in cells.

To see if it would work in people, Alam Khan, who was a postdoctoral fellow in Anderson's lab, organized a study in Pakistan. Volunteers with Type 2 diabetes were given one, three or six grams of cinnamon powder a day, in capsules after meals.

All responded within weeks, with blood sugar levels that were on average 20 per cent lower than a control group. Some even achieved normal blood sugar levels. Tellingly, blood sugar started creeping up again after the diabetics stopped taking cinnamon.

In the volunteers, the Cinnamon also lowered blood levels of fats and "bad" cholesterol, which are also partly controlled by insulin. And in test tube experiments it neutralized free radicals, damaging chemicals which are elevated in diabetics.

Cinnamon's essential oils also qualify it as an "anti-microbial" food, and cinnamon has been studied for its ability to help stop the growth of bacteria as well as fungi, including the commonly problematic yeast Candida.

In a study, published in the August 2003 issue of the International Journal of Food Microbiology, the addition of just a few drops of cinnamon essential oil to approximately 3 ounces of carrot broth, which was then refrigerated, inhibited the growth of the food borne pathogenic Bacillus cereus for at least 60 days. When the broth was refrigerated without the addition of cinnamon oil, the pathogenic B. cereus flourished despite the cold temperature. In addition, researchers noted that the addition of cinnamon not only acted as an effective preservative but improved the flavor of the broth.

Research led by Dr. P. Zoladz and presented April 24, 2004, at the annual meeting of the Association for Chemoreception Sciences, in Sarasota, FL, found that chewing cinnamon flavored gum or just smelling cinnamon enhanced study participants' cognitive processing. Specifically, cinnamon improved participants' scores on attention related processes, virtual recognition memory, working memory, and visual-motor speed while working on a computer-based program.

Can Eating Processed Foods Lead To Depression?

A diet heavy in processed and fatty foods increases the risk of depression, according to British research published. Researchers at University College London also found that a diet including plenty of fresh vegetables, fruit and fish could help prevent the onset of depression.

They compared participants -- all civil servants -- who ate a diet largely based on "whole" foods with a second group who mainly ate fried food , processed meat, high-fat dairy products and sweetened desserts.

Taking into account other indicators of a healthy lifestyle such as not smoking and taking physical exercise , those who ate the whole foods had a 26 percent lower risk of depression than those who ate mainly processed foods.

People with a diet heavy in processed food had a 58 percent higher risk of depression.

The researchers put forward several explanations for the findings, which are published in the British Journal of Psychiatry .

Firstly, the high level of antioxidants in fruits and vegetables could have a protective effect, as previous studies have shown higher antioxidant levels to be associated with a lower risk of depression.

Secondly, eating lots of fish may protect against depression because it contains high levels of the sort of polyunsaturated fatty acids which stimulate brain activity.

And they said it was possible that a "whole food" diet protects against depression because of the combined effect of consuming nutrients from lots of different types of food , rather than the effect of one single nutrient.

The researchers concluded: "Our research suggests that healthy eating policies will generate additional benefits to health and well-being, and that improving people's diet should be considered as a potential target for preventing depressive disorders ."

The study was carried out on 3,486 people with an average age of 55, who worked for the civil service in London.

What Is Quinoa?

Benefits of Eating Almonds

Almonds are a wonderful Whole Food and science has recently discovered the benefits of eating them in their whole form. Recent research reveals that the flavonoids in almond skin works synergistically the vitamin E found in almonds. This synergistic combination creates more than 200% the antioxidant power of the almonds and almond skins when separated. "We have identified a unique combination of flavonoids in almonds," said Jeffrey Blumberg, Ph.D., senior scientist and director of the Antioxidants Research Laboratory at Tufts University. Lowered Your "Bad" LDL Cholesterol And Reduce Heart Disease With Walnuts

Back in 1993, the original Walnut Study from Loma Linda University made headlines around the world and was published in the New England Journal of Medicine.

Why all the excitement? Because Loma Linda University had broken new ground. They were the first to find that walnuts in a controlled diet reduced LDL (bad) cholesterol and heart disease risk significantly more than the Step 1 diet that was then recommended by the American Heart Association. Participants lowered their "bad" LDL cholesterol by almost 6 per cent and heart disease risk by 11 per cent beyond what would be expected from the Mediterranean diet alone. The Loma Linda study participants substituted walnuts, one of nature's richest sources of polyunsaturated fat, for saturated fat. The Barcelona participants substituted walnuts for another healthy fat.

Barcelona scientists also remarked on the ease of incorporating walnuts into the diet. According to researcher Juan Carlos Laguna, Ph.D., "That's the main point of the study. You eat a normal amount, like five or six walnuts a day. That's something you can do every day without any problem."

Don't Be Fooled By "Fruit" Products For Kids

Over half of the most aggressively advertised children’s foods that prominently feature fruit on their packaging contain no fruit at all, according to a study released by the Strategic Alliance for Healthy Food and Activity Environments. The study - Where’s the Fruit? reveals that 51 percent of these products do not contain fruit, and another 16 percent contain only minimal amounts of fruit despite prominent fruit promotions on the packaging.      

“Parents drawn to products that seem healthier for their children based on references to fruit on the packaging are being deceived,” explains Leslie Mikkelsen, a registered dietician with the Strategic Alliance and lead author of the study. “Food and beverage companies are some of the most sophisticated communicators in the world and are clearly capable of accurately reflecting what is in their products if they wanted to.” 

The Where’s the Fruit? study identifies the most heavily advertised children’s food products that include words and images of fruit and/or fruit ingredients on the packaging. A total of 37 products were included in the final study, and their ingredient lists were analyzed to determine the presence of fruit ingredients.  A full 51% of the products contained no fruit ingredients at all despite the images of fruits and use of words such as “fruity,” “fruit flavors” and “berry” on the packaging.

“The nation is facing a staggering epidemic of chronic diseases that result from poor eating and physical inactivity,” cautions Dr. Andria Ruth, a pediatrician for the Diabetes Resource Center of Santa Barbara. “Children are particularly affected and these food companies are making parents’ jobs even harder by using misleading packaging to lead them to think that they are making a healthy choice when they are not."

Food As Medicine

Some vegetables contain chemicals that appear to enhance DNA repair in cells, which could lead to protection against cancer development, say Georgetown University Medical Center researchers. In a new study published in the "British Journal of Cancer" and by the journal "Nature" the researchers show that in laboratory tests, a compound called indole-3-carinol (I3C), found in broccoli, cauliflower and cabbage, and a chemical called genistein, found in soy beans, can increase the levels of two specific proteins that repair damaged DNA.

This study is one of the first to provide a molecular explanation as to how eating vegetables could cut the risk of developing cancer, an association that some population studies have found, says the study's senior author, Eliot M. Rosen, MD, PhD, professor of oncology, cell biology, and radiation medicine at Georgetown 's Lombardi Comprehensive Cancer Center . "It is now clear that the function of crucial cancer genes can be influenced by compounds in the things we eat," Rosen says.

"Our findings suggest a clear molecular process that would explain the connection between diet and cancer prevention." In this study, Rosen exposed breast and prostate cancer cells to increasing doses of I3C and genistein, and found that these chemicals boosted production of the repair proteins BRCA1 and BRCA2.

Since decreased amounts of the BRCA proteins are seen in cancer cells, higher levels might prevent cancer from developing, Rosen speculates, adding that the ability of I3C and genistein to increase production of BRCA proteins could explain their protective effects.

The study was funded by the Susan G. Komen Breast Cancer Foundation and the National Cancer Institute and co-authors include Drs. Saijun Fan, MD, PhD, Qinghui Meng , MS , Karen Auborn, PhD, and Timothy Carter, PhD.

Raisins May Reduce Cancer Risks

Raisins rank among the top antioxidant foods, according to USDA government tests. Early findings suggest that eating plenty of fruits high in antioxidants, such as raisins may help slow the processes associated with aging in both body and brain.

 
Andrew J. Dannenberg, M.D. a cancer researcher at the Weill Medical College of Cornell University reports that the antioxidant catechin, found in raisins and some other fruits and vegetables, in the diet of mice genetically predisposed to intestinal tumors reduced the number of tumors by at least 70 percent compared to the control group. This type of study adds to the body of evidence which shows that components of fruits and vegetables have the potential to reduce the risk of colorectal cancer, colorectal adenomas and other gastrointestinal tumors.

Carl L. Keen, Ph.D. from the University of California Davis reports that a significant amount of raisins eaten daily for 4 weeks increased the plasma antioxidant capacity. This in turn decreased the level of circulating oxidized low-density lipoprotein (LDL) also known as the “bad cholesterol”.  These data clearly show raisins are an important part of 5-a-day diet and that benefits of eating raisins are similar to benefits seen when eating other fruits and vegetables with these plant antioxidants.

Christine D. Wu, M.S., Ph.D. of the University of Illinois at Chicago, College of Dentistry has found that raisins contain compounds including oleanolic acid that inhibit in vitro growth of Streptococcus mutans, the bacteria in the mouth responsible for tooth decay. Oleanic acid and other compounds in raisins also inhibit organisms associated with periodontal disease, including Porphyromonas gingivalis and Fusobacterium nucleatum. Oleanolic acid is most effective in suppressing in vitro plaque formation by Streptococcus mutans. Prevention of plaque building up on the tooth surface is critical both for preventing tooth decay and promoting healthy gums.

Mary Ellen Camire, Ph.D. of the University of Maine reports that dietary fiber and other components may reduce the risk of heart disease and cancer by binding bile acids and causing their elimination from the body. Camire’s study confirms that eating fibrous foods, such as raisins, stimulates the body to replace the bile acids that have been eliminated by making them from its own cholesterol, thus potentially lowering serum cholesterol and the risk of coronary heart disease. Furthermore, bile acids that are bound by fibers such as those in raisins will not be metabolized to a more toxic form and this may potentially reduce cancer risk.

Gene A. Spiller, Ph.D. of the Sphera Foundation and Health Research Studies Center - Los Altos, CA reports feeding of raisins along with peanuts to 10-12 year old children prior to a soccer game resulted in lower increases in blood glucose and insulin than a snack of a white bagel and jam. This is important because it means a more steady fuel supply to the exercising muscle of the young players. Lower insulin levels are advantageous because high levels of circulating insulin can promote the laying down of fat and may lead to insulin resistance, a concern among US children today, where rates of obesity and type 2 Diabetes are increasing.

When it's really hot, should I avoid exercising outside?

We should be cautious when it's hot and humid. But for the most part, we shouldn't have to skip our workouts just because of the weather. Unless you are training for an upcoming afternoon competition, avoid exercising during the hottest parts of the day (between noon and 3pm). Early morning and evening workouts are recommended. The sun is not overhead, it's cooler, and generally breezier during these times. Second, dress for the weather. This may sound elementary, but wearing the standard cotton T-shirt is outdated. Now there are shirts specifically designed for hot weather since they pull sweat away from the body. These shirts are made of synthetic fabrics and are sold under the names of Capilene, CoolMax, and OmniDry. They are relatively inexpensive, attractive and comfortable. Third, drink up. Most people think that replenishing fluids after exercising is enough. But, on days of hot and humid weather, drinking 1-2 glasses of water 30 minutes prior to the workout can help you avoid dehydration and any form of heat sickness. Good luck, and remember, sweating a lot during hard work is necessary to keep the body as cool as possible.

The benefits of Whole Grain Corn

Corn is a wonderful whole grain food that is a good source of vitamin B1, Vitamin B5, folate, fiber, vitamin C, Phosphorous, Manganese and a nutrient called beta-cryptoxanthin.

In addition to preventing birth defects, Folate can also help to lower your risk of heart attack, stroke and peripheral vascular disease.  It has been estimated that consumption of 100% of the daily value of folate would, by itself, reduce the number of heart attacks suffered by Americans each year by 10%. Folate-rich diets are also associated with a reduced risk of colon cancer.

Consuming foods rich in beta-cryptoxanthin, an orange-red carotenoid found in high amounts in corn, may significantly lower one's risk of developing lung cancer. A study published in the September, 2003 issue of Cancer Epidemiology, Biomarkers and Prevention reviewed dietary and lifestyle data collected from over 63,000 adults in Shanghai, China, who were followed for 8 years. Those eating the most crytpoxanthin-rich foods showed a 27% reduction in lung cancer risk. When current smokers were evaluated, those who were also in the group consuming the most cryptoxanthin-rich foods were found to have a 37% lower risk of lung cancer compared to smokers who ate the least of these health-protective foods.

Corn is also a good source of Thiamin which is a nutrient essential to good brain cell health and mental function.  The brain uses Thiamin to make a neurotransmitter called acetylcholine which is essential for good memory.  In addition, maintaining healthy acetylcholine levels may help to reduce the risk of Alzheimer’s disease.

Research reported at the 2004 American Institute for Cancer Research (AICR) International Conference on Food, Nutrition and Cancer, by Rui Hai Liu, M.D., Ph.D., and his colleagues at Cornell University shows that whole grains, such as corn, contain many powerful phytonutrients whose activity has gone unrecognized because common research methods have overlooked them.  Dr. Liu’s team measured the antioxidant activity of various foods, assigning each a rating based on a formula.  Broccoli measured 80, Spinach 81, Apples 98, Bananas 65, but Corn topped them all measuring a whopping 181.

Oprah Goes Vegan For 21 Days

Oprah, the talk show queen has announced she is going vegan for 21 days as part of a cleanse and will be documenting each day on her blog.  Oprah was inspired to remove meat and animal products from her life for a brief time after rereading the book, “A New Earth.”  She has recipes on her blog and menu plans.

A State of Denial - Childhood Obesity

A recent study published by the University Of Michigan Department Of Pediatrics and Communicable Diseases and the University of Michigan Child Health Evaluation and Research (CHEAR) Unit shows that a large number of parents may be in denial about their children's weight.  The research was published in Vol. 2, Issue 3; December 10, 2007.

With each passing year, the risks to children who are overweight or obese are becoming clearer and better documented. With respect to asthma, obese children age 6-17 have a 200% higher risk of asthma than children who are at a healthy weight.

Overweight youngsters are also at risk for diabetes, high cholesterol, high blood pressures as well as other chronic diseases that are usually seen only in adults. Allowing a child to remain overweight or obese is as dangerous to the child's health as smoking cigarettes.

According to the study, one-quarter of US children ages 6 to 17 are either obese or overweight. Surprisingly, less than 10% of parents of obese children ages 6 to 11 reported being "very concerned" about their children's weight.

More than 40% of parents of obese children age 6-11 perceive their children's weight status as "about the right weight".  In reality, a 6-year-old boy of average height, (3 feet 9 inches) would be considered obese if he weighs 55 lbs. or more.

Cut Kidney Cancer Risk - Eat Bananas

Research has proven that just two bananas provide enough energy for a strenuous, 90-minute workout. No wonder the banana is the number one fruit with the world's leading athletes. But energy isn't the only way a banana can help us keep fit. Bananas can also help us overcome or prevent a substantial number of illnesses and conditions, making it a must to add to our daily diet.

Research published in the January 2005 issue of the International Journal of Cancer suggests that regular consumption of whole fruits and vegetables, especially bananas, is highly protective against kidney cancer. The results of this large population based prospective study (13.4 years) of 61,000 women aged 40-76, show that women eating more than 75 servings of fruits and vegetables per month cut their risk of kidney cancer by 40%.  Among the fruits, bananas were found to be especially protective. Women eating bananas four to six times a week cut their risk of kidney cancer by 50% compared to those who did not eat bananas.

A group called MIND, the largest mental health charity in England, did a study amongst people suffering from depression and found that many felt much better after simply eating a banana. This is because bananas contain Tryptophan, a type of protein that the body converts into serotonin, known to make you relax, improve your mood and generally make you feel happier.

Two-hundred students at a Twickenham (Middlesex, UK) school were helped through their exams this year by eating bananas at breakfast, break, and lunch in a bid to boost their brain power. Research has shown that the potassium-packed fruit can assist learning by making pupils more alert.

Bananas have also been recognized for their antacid effects that protect against stomach ulcers and ulcer damage. In one study, a simple mixture of banana and milk significantly suppressed acid secretion.  The nutrients in bananas help activate the cells that compose the stomach lining, so they produce a thicker protective mucus barrier against stomach acids.  Bananas also contain compounds known as protease inhibitors which help eliminate bacteria in the stomach that are the primary cause of stomach ulcers.

So much so, the US Food and Drug Administration has just allowed the banana industry to make official claims for the fruit's ability to reduce the risk of blood pressure and stroke.

Ginger Can Kill Ovarian Cancer Cells

Ginger can kill ovarian cancer cells while the compound that makes peppers hot can shrink pancreatic tumors, researchers told a conference. Their studies add to a growing body of evidence that at least some popular spices might slow or prevent the growth of cancer.

Dr. Rebecca Liu, an assistant professor of obstetrics and gynecology at the University of Michigan Comprehensive Cancer Center, and colleagues tested ginger powder dissolved in solution by putting it on ovarian cancer cell cultures. It killed the ovarian cancer cells in two different ways. First, through a self-destruction process called apoptosis and second, through the process of autophagy in which cancer cells digest themselves, the researchers told a meeting of the American Association for Cancer Research.

Ovarian cancer kills 16,000 out of the 22,000 U.S. women who are diagnosed with it every year, according to the American Cancer Society. Ginger has been shown to help control inflammation, which can contribute to the development of ovarian cancer cells.

“In multiple ovarian cancer cell lines, we found that ginger-induced cell death at a similar or better rate than the platinum-based chemotherapy drugs typically used to treat ovarian cancer,” said Dr. Jennifer Rhode, who helped work on the study.

The Power of Nuts - Reduce Heart Disease

Some fairly recent analyses of the Adventist Health Study findings showed a remarkable relationship between eating nuts and whole wheat bread, and experiencing a reduced risk for Coronary Heart Disease (CHD). These findings were the subject of a research article submitted by Dr. Fraser and his colleagues to the Archives of Internal Medicine, and published in its July 1992 issue.

The most outstanding findings of this part of the overall study show that nut consumption reduces the risk of both fatal and nonfatal coronary heart disease. Again, the researchers looked for a variety of ways to disprove the finding, adjusting the data for differences in age, sex, smoking habits, exercise, relative weight, and hypertension. The protective qualities of nuts remained statistically significant and essentially unchanged in magnitude.

Those individuals who ate nuts one to four times a week had 26% decrease in the risk of suffering from definite nonfatal myocardial infarction (MI) and a 27% decrease in the risk of definite fatal coronary heart disease as compared to those who ate nuts less than once a week. However, those individuals who ate nuts five or more times a week had a 48% decrease in the risk of definite nonfatal heart attack and a 38% reduced risk of definite fatal CHD as compared to the group who ate nuts less than once a week.

Age- and sex-adjusted analyses of the associations between nut consumption and definite CHD were calculated for various subgroups within the Adventist Health Study. Results were examined to see if the association between nut consumption and CHD held up in different segments of the population. The consistency was quite remarkable and adds to the researchers' confidence in the importance of these findings.

Both "ever-smokers" and "never-smokers" showed a 46% decrease in the risk of coronary heart disease when they ate nuts five or more times a week. Study participants with normal blood pressure showed that eating nuts more than five times a week reduced their risk of coronary heart disease by 60% percent, and hypertensive individuals enjoyed a 30% decrease in risk compared to similar subjects who ate few nuts.

Can The Sodas

Gary Foster, director of the Center for Obesity Research and Education at Temple University and colleagues have just completed a two year study.  Five Philadelphia elementary schools replaced sodas with fruit juice. They scaled back snacks and banished candy. They handed out raffle tickets for wise food choices. They spent hours teaching kids, their parents and teachers about good nutrition.

The results were phenomenal.  The number of students who became overweight during the two-year experiment was a full 50% less than the number of kids who became overweight in schools that didn’t make these changes. The findings are published in the April, 2008, issue of the journal Pediatrics.

In the five test schools, juice, water and low-fat milk replaced sodas. Snacks had to meet limits for fat, salt and sugar. Students who ate healthy snacks got raffle tickets to win prizes such as bikes and jump ropes.

But the schools can’t do it all on their own – the biggest challenge to schools is that kids drink sodas and eat junk food at home – so they come to school expecting to do the same.  As parents, imagine the difference we could make if all of us made these same simple changes in our homes.

Natural Vitamin D - The Sun!

With springtime here and summer time right around the corner, many people are once again becoming concerned about exposure to sunlight, but the latest research may really surprise you.

A recent study by researchers at the University of California found that solar ultraviolet B (UVB) radiation can significantly reduce the risk of 16 different types of cancer by naturally stimulating the production of vitamin D in the skin. The study's authors are Cedric F. Garland, Dr.P.H., from the Department of Family and Preventive Medicine at the University of California, San Diego, and William B. Grant, Ph.D., director of the Sunlight, Nutrition and Health Research Center (SUNARC) www.sunarc.org/about.htm

"Enhancing vitamin D status appears to be the single most important simple thing people can do to reduce their risk of cancer, apart from avoiding tobacco and moderation in the intake of alcohol," say Cedric Garland and William Grant.

It has been frequently reported that those who work outdoors have a reduced risk of developing melanoma [Garland et al., 1990; Kennedy et al., 2004]. The reasons appear to be twofold:

• They develop a tan that blocks the penetration of ultraviolet radiation so it can't produce the free radicals that can lead to melanoma.
• They produce lots of vitamin D.

The researchers recommend that people get their vitamin D from exposure to natural sunlight. Fair-skinned people who live in sunny regions of the country can produce about 1,500 IU of vitamin D in 20 minutes of exposure at noon if only 10 to 20 percent of their body is exposed -- such as chest, back and arms. People should try to expose more of their skin surface for a shorter amount of time, rather than stay in the sun longer with minimal skin exposure, the study says. Darker-skinned people may need up to four times as long to make the same amount of vitamin D as fair-skinned people.

The study recommends wearing hats to avoid prolonged sun exposure on more sensitive parts of the body, such as the face, and to keep moving when in the sun. Garland and Grant caution fair-skinned people to avoid over-exposure, since the skin produces sufficient vitamin D in just 20 minutes a day.
